Gooseberry and Pepper Meringues


  • 3 large egg whites, at room temperature
  • 80g caster sugar
  • Gooseberries frozen
  • Black Pepper
  • Icing Sugar


  1. Add the 3 egg whites to a large mixing bowl and use an electric whisk to mix the egg whites
  2. Slowly add the caster sugar to the egg white mixtures
  3. Add Black Pepper to the mixture
  4. Keep mixing until the egg white form stiff peaks
  5. In a blender mix the gooseberries until it forms into a sauce
  6. Add 2 tablespoons of the gooseberry sauce into the mixture and fold the sauce into the meringues
  7. Transfer the mixture to a piping bag
  8. Decorate as you wish ( I did little circles as my piping skills are not that great)
  9. Keep in the oven at 110c for 60-80 minutes
  10. Allow the meringues to cool
  11. With a brush, brush the remaining sauce on the meringues
  12. Decorate with icing sugar and fresh black pepper
